Tonight's Supper. Yum.

Quick and dirty Souvlaki

1 boneless pork chop per adult
Cavender's Greek seasoning (to taste--on both sides of the chop)
Olive oil
1 tomato, sliced
1 onion (red or yellow), sliced
1 green bell pepper (optional) sliced
1 pita per adult
Tzatziki  sauce (available between the yogurt and cheese section of Wal-Mart)

Coat the bottom of a cast-iron skillet in olive oil--2-3 Tablespoons should do for a ten-inch skillet, use more for larger.  Heat the oil.  Add seasoned pork chops to hot skillet, cook 'till done.  You can chunk them up to fit in the pita better, or leave whole--I cut mine into strips.  Remove pork from hot skillet, put on bread.  Add tomato, onion, pepper, and tzatziki sauce.  Fold up and enjoy.

Excellent with steak fries.
